Some where around 35-45 pages of typing and saving along the way, Writer simply vanishes from my screen.
It does allow me to recover, but it only recovers from the last save I made.
Also,
I saved my document, I always save twice just to be sure.
Shortly after the save, without typing, my document vanished from my screen.

Please test with a clean profile, Menu/Help/Restart in Safe Mode

This looks like bug 153764. Please update LibreOffice to the latest version (7.5.2)
