I tried to change this option, but couldn't find any.
Also, some documents I used to edit are not listet in
the Recent Document list - I wonder if this list does
only show recently _opened_ files (rather than recently
_edited_ or _saved_ files).

This bug was filed before the changes to Bugzilla on 2011-10-16. Thus it
started right out as NEW without ever being explicitly confirmed. The bug is
changed to state NEEDINFO for this reason. To move this bug from NEEDINFO back
to NEW please check if the bug still persists with the 3.5.0 beta1 or beta2 prereleases.

That works as designed.
There's an extension 'History Master' with the requested feature:

The second part of your report might be a duplicate of 'Bug 37775 - EasyHack: Recent Documents not updated by Save & Save As...'.
