When I attempt to update my LibreOffice suite to the latest version, it informs me that auto-update is "disabled." When I agree to update manually and it brings me to the LibreOffice website, it sends me to a version that is already long out-of-date. The latest version is 3.6.2, yet auto-update tells me that 3.5.6 is the latest version. This is obviously incorrect.

No, it is the intended behavior because, in this case, LO has a conservative behavior and first releases in the branch 3.6 are not yet considered ready for production use.
