After saving and reloading a document with tables the tables have all shrunk and I can't seem to adjust them so I can see the text inside the cells. It was fine yesterday when I saved it...

Not nearly enough information here for us to do anything about it. We need:

a) your system specs
b) what version of libreoffice
c) specific steps to reproduce the problem
d) test document showing the problem
