Please test disabling the option Menu/Tools/Options/LibreOffice/View - Use OpenGL for all rendering. It appears that the OpenGL rendering option is disabled already. I have purged and upgraded to v5.0.4.2 to see if the issue persists in this latest release. Please try resetting the user profile, sometimes solves strange issues. It is not deleted when reinstall. https://wiki.documentfoundation.org/UserProfile Usually it's enough renaming/deleting the file "user/registrymodifications.xcu", it affect all the options in Menu/Tools/Options, and the files "user/basic/dialog.xlc" and "scrip.xlc" are overwritten, additionally custom colors in "user/config/standard.soc" are lost. After doing a purge with apt-get, and then installing from the download package from your site (rather than the Mint repositories), I have not seen the problem re-occur yet. Seeing as it is an intermittent issue, I will continue looking for the issue to pop-up again over the next week. If so, I will report back, and attempt to reset my profile. However, if I scroll down the sheet, the sheet updates properly. I am also noticing that this affects the system menus too (such as the "Help" menu). I have a multi-sheet (12-18 sheets I'd say), and I am using mostly vlookup functions between sheets. I originally saw this issue in an early release of LibreOffice v5.0.0.x, but I could reproduce the issue every time, just by creating a new worksheet. v5.0.3.2 (from Linux-Mint 17.3 repos) has thus-far been more reliable.
