User-Agent: Mozilla/5.0 (X11; Linux x86_64; rv:45.0) Gecko/20100101 Firefox/45.0
Build Identifier: LibreOffice 5.1.3.2

If you try to customize an Excel doc which use mixed fonts in a single cell, for instance Arail + Garamond, then changing the font to another, for instance Sans Serif, will only affect fonts which are installed on this linux desktop. Here the Arial font will changed to Sans Serif while the Garamond font leaves untouched.
Additionally to this problem, the same behavior is noticed for font formatting. Changing the style to Bold affects only the installed fonts.

Reproducible: Always
