I think the shapes, text boxes and frames are confusing and inconsistent.

As far as I understand, I can't insert fields in or use styles to format the contents of a text box.

If I on the other hand right click a shape and add a text box, I can insert fields in and use styles to format the contents of the text box.

The text box added looks like a frame too. Text boxes are invisible.

Right click on a text box and choose "Text", then you can choose to "Fit text to frame".

IMHO frames and shapes are all that are needed and frames should be possible to add when right clicking a shape.

Correct.

That's because it is actually a frame, not a text box. The context menu title is misleading. See here: http://vmiklos.hu/blog/textbox.html

"frame" here means the bounds of that text box, not a Writer's text frame.
