I have tried saving various files - MS Word (1997-2003) or Writer documents and Excel and Calc documents to get the above message each time. 

Edit - I have just tried virtually every format available under Writer and cannot save in any of them, native or Microsoft, including rtf and txt

Reproducible: Always

Steps to Reproduce:
1.Type a document
2.Select 'Save As...' or 'Save' or 'Save a Copy' from the file menu or by Key shortcut
3.Press 'Save' after selecting file type or just leaving it to Writer (All Formats)
Actual Results:  
Dialog Box appears -  Says 'Error saving file XXX.doc.  /home/Fred/Documents/XXX.doc (or .odf or .xls or.ods) does not exist

Expected Results:  
To save the file in the expected format

Computer is an Acer Aspire E5-573-32TV, Intel Core i3-5005U(2.0GHz, 3MB L3 Cache), 8GB DDR3 L Memory, 2TB HDD, Intel HD Graphics 5500, up to 4181 MB Dynamic Memory.

Dual booting Windows 10 and Linux Mint 17.3, using Cinnamon Desktop (via rEFInd boot manager)

5.0.3 is EOL.
Please give a try to a newer LO version from https://launchpad.net/~libreoffice/+archive/ubuntu/ppa
+ rename your LO directory profile (see https://wiki.documentfoundation.org/UserProfile#GNU.2FLinux)
