Description:
I see only a limited number of number formats. One which seems like an important one (duration) isn't even available. A duration copy/pasted from sheets or excel is formatted as a time. This is particularly annoying as I can't seem to even create a custom number format.

Duration is available, it's for example the [HH]:MM:SS Time format.
Please be more specific about "A duration copy/pasted from sheets or excel is formatted as a time.".
And of course creating custom formats is possible in the number formatter dialog, menu Format -> Cells... Numbers, just enter a new format code.
