If you are not in edit mode (f2) then Insert > Field > Date (.uno:InsertFieldDateVariable), Sheet Name (.uno:InsertFieldSheet), and Document Title (.uno:InsertFieldDocTitle) arent enabled and they should work in non-edit mode by first jumping into edit mode, inserting the field and then jumping out of edit mode if you werent previously in edit mode. If the cell already has text in it, then it should also append a space to the cell contents.

Usually when in non edit mode, any data entered replaces possible current cell content.

yes i guess that is the better option to be consistent.

please note that Bug 166990 is not about the edit mode but: 

> there is no menu item "More fields" in Insert > Field 
> thus File > Properties > Custom Properties can not be inserted into document

i.e. no matter if in edit mode or not, you can not insert a Custom Properties entry (set at File > Properties) to the cell
