Create a new Draw document, insert any object from the gallery.
Change the sidebar to properties, expand "position and size" and press in the height + or - button or the width + or - button. The height or width changes drastically instead of incrementally.
Note: The - buttons work as expected the first time sometimes.

After that first time, the changes are incremental, as expected.

Not reproduced.

How drastic is this change exactly?

Do you reproduce in Safe mode? Help - Restart in safe mode and then Continue in safe mode.

The change is approximately half of the previous size.

Ok, so as the height is ticked upwards, suddenly the rendered height is only half.
I tried also with this character from "People", but no problem for me.

Still waiting for your test in Safe mode.

I updated to 5.0.3 in windows, in safe mode. The same problem, the character heigh is only half.

To check if the problem comes from the language... Is it possible to change it to english? how?

You can change the UI language in Tools - Options - Language settings

For locale, you might study this: https://unix.stackexchange.com/questions/74618/how-to-change-locale-environment-variable (and launch LibreOffice from the command line)

Confirmed. The problem is in the User Interface language.
If it is English (USA), no problem.
If it is Spanish (Spain), problem.

Even with Locale settings: Spanish (Spain), Decimal separator key: Same as locale settings
Default Languages for Documents Western: Spanish (Spain)
and Enhanced Language Support: Ignore system input language.

In fact, in english UI, the initial height is "9,89 cm" for the female painter, and in spanish UI, the initial height is "3,90 cm".

Ok, no problem with Finnish UI (initial height is 9,91 cm

for some reason the default height/width is 1.77/1.72 while in english is 4.50 and 4.37 for the same object... weird...

Just for the record, on pc Win10 with LO master sources updated today + Spanish UI, I don't reproduce this.
