This error is present in LibreOffice Calc 6.0.6 both in Linux and in Windows 10. When you change the color of a cell with the shared ODS format and proceed to save, the cell color is not saved. When you reopen the spreadsheet the cells are again colorless.
There is not such bug. When a spreadsheet it's in share mode you can't change cell formats, it is advertised on the Menu/Tools/Share box.

If you write text in a cell and change the color of another cell then the save is successful. It is a different bug. Reported https://bugs.documentfoundation.org/show_bug.cgi?id=120655
