I have tried the software “LibreOffice Calc 6.2.4.2-821.3” (Build-ID: 20(Build:2)) out again. If you move around in cells which belong to a pivot table, the management object is known. A context menu entry like “Edit layout …” can be offered then. I would find it occasionally helpful if corresponding actions like the following will be also provided. * Mark data column * Mark data row * Mark table area
Mark column/row is done by a click on the column/row header or the top-left cell respectively for the whole table. Why do you think we need those in the context menu?

I don't understand clicking on a col/row header as an inconvenience. In fact it is just one click versus two for the menu. We would have to introduce new commands, which bloats the API further with detriment on maintenance what makes me reluctant to agree here. Accessibility would be an argument...

We had this topic on the agenda for the weekly design meeting. The row/column selection is not limited to pivot tables and commands would be relevant for spreadsheets too. And since we have plenty of shortcuts to deal with data I close this as WFM.
