XLSX does not support fields in cells. Other fields, like "sheet name", will also not save to XLSX (see bug 158827 comment 5). However, dropping the text of the field is not OK. At least the static text should stay. The same happens with XLS.
Note that fields (as inserted into cells using Insert->Field, when inside a cell) - which is what this bug report is about - is not the same as form controls, which were mentioned in comment 4; hence, comment 5 is also not correct.
