Sometimes when I edit an ods file through a self-hosted Nextcloud, the file then appears modified way into the future, often something like "in 404 years".

It messes up Nextcloud sync a bit, and must be some kind of bug.

What is the actual date when you hover over the file?

Also, which version of Nextcloud, Collabora Online connector app (in NC) and CODE are you using?
