A possible solution; no warranty
Grant LibreOffice Full Disk Access in Security & Privacy -> Privacy in System preferences

Well, thank you for your valued input.
But I tried this before. LibreOffice is granted full disk access, but that makes no difference. Crash, whenever I try to access MacOS-Contacts.

I even disabled SIP, but that makes no difference, too.

found out that the bug is also present in LibreOfficeDev_7.0.0.0.alpha1_MacOS_x86-64

If you're already testing multiple builds. Try something 'old'. Say 6.0 or even 4.4.7.2.. to check if is consistent behavior.. or introduced somewhere

The issue can be bibsected if previously worked
