That happens, because the dictionary and the sentence checking share the same dictionary directory, and extension details (the extension itself doesn't contain the sentence checking). I presume when the extension is updated, LO completely disregards the original. I don't know what a reasonable solution would be, of course the English dictionaries extension could take and integrate grammar checking as well, but would be nicer if they could be updated separately.
This bug persists in LO 7.2.1.2. There is a forum thread on it here where people were trying to work out what is going wrong with LO on this score: https://forum.openoffice.org/en/forum/viewtopic.php?f=101&t=106341 I'm perplexed in that if this isn't a bug in the English dictionary extension, why has this bug report been filed under "Component: Extensions"? Shouldn't it be filed under "LibreOffice"?
The description of the component says: "For all problems with the Extensions like installation, does not work as expected, GUI looks ugly, interfering LibreOffice function, translation missing / wrong"
The poster 'LastUnicorn' has posted a work-around for this now. The work-around can be seen here: https://forum.openoffice.org/en/forum/viewtopic.php?f=101&t=106341#p517149 There is also information there concerning why this 'bug' is happening in the first place, so worth a look. In theory it sounds like it should be fairly easy for LibreOffice to get a fix in place for this.
