An option to automate this behavior according to the system hour would be perfect too. I consider this not just as a cosmetic option, it can have a net positive impact on the health of the users. For LO 7.2.0 a 'LibreOffice Dark' application color scheme has been added to the Tools -> Options -> Application Colors panel. Not clear a toggle elsewhere in the UI is of any real use. To UX advise team...
I think the change should be done automatically triggered by the OS/DE (dark mode is missing on Windows bug 118320 and macOS bug 118017 and there is the META ticket bug 143344 for issues on Linux). If you pick the special pink theme (todo at bug 125823 and in particular bug 125217) it should remain. Assuming all this is implemented and an infinite number of themes can be added via extension the easy toggle wont be usable anymore.
