Just for the record, on pc Debian x86-64 with master sources updated today, I don't reproduce this with gtk3, gen or kf5 rendering. BTW, shortcut here is Ctrl+Alt+= Perhaps Windows only bug?
no repro in Version: 7.3.0.0.alpha0+ (x64) / LibreOffice Community Build ID: ac80ec817eb07c77a51bc0729985a473c734182e CPU threads: 16; OS: Windows 10.0 Build 19042; UI render: Skia/Raster; VCL: win Locale: ru-RU (ru_RU); UI: en-US Calc: CL

So, I assigned and used ^f8 —crash! same result from the menu: Insert>Object>Formula (^ is short for Ctrl —à la DOS!) The problem is with Insert>Object>Formula
Made it crash a couple of times but could not make it happen every time. I did not find the reason for the crashes. Currently, no crash happens when executing the command "Insert>Object>Formula Object". It seems the bug no longer exists.
