Description:
Example: Cells A1:E1 are filled with 'normal' values. Cell F1 contains when the last edit happened to one of these values. If one or more of the 'normal' values are edited cell F1 automatically updates to the current time.

Apologies if this functionality is already implemented. I wasn't able to find it.

It seems this could be achieved by writing a macro and using events. Please ask for support in https://ask.libreoffice.org/
