With the new RC2 of LibreOffice 7.3.0 (7.3.0.2), Java on macOS ARM is gone, i.e. it is no longer shown / selectable in the LibreOffice settings. In 7.3.0.1 you could select it. macOS 12.1 on MacBook Pro 16" with M1 Max Oracle JDK for macOS ARM (not the Intel version), Version 17.0.1 I am opening a new bug for this, since Alex Thurgood asked me to.

I did not build it, but downloaded 7.3.0.2 from the officiel pre-release server

Yes, configure mistake, forgot to adjust the config for the 7.3 branch/7.3.0 release. Since there's another rc planned, I'd rather not do another build for rc2 at this point, the initial one already has been distributed on the mirrors for a while, and a rebuild would have the same version number and git hash but different checksums, so potential for lots of confusion.
This should be fixed in LibreOffice 7.3.0.3. Closing If not, please reopen...
