On which env are you? (Windows, Linux, MacOs)?
Could you give a try at brand new 7.3.1 ?

Hidden text under a blank block.

This is typically recovered by selecting the block where the text should be, hitting backspace, followed by clicking undue.

The two examples that I've added, both occurred in the same place within the text. These issues seem to occur more often with large files.

Thank you for the screenshots but you didn't answer about the env.
Are you on Windows, macOS, Linux?

Also could you try to upgrade to LO 7.3.5 + apply advice from https://wiki.documentfoundation.org/QA/FirstSteps#Graphics-related_issues_.28_Skia_.29 ?
