Changes are immediate for me if set in Options-Writer-Mail Merge Email, or in the Confirmation dialog.
I think that issue was as reported, I saw it with older LO, but resolved, I don't see it with updated master 7.4+. https://gerrit.libreoffice.org/gitweb?p=core.git;a=log;h=d34d1db55978bdcff082af1e0f75b18fa6fc94f4 is 3 weeks old, so it seems like a recent fix. Axel, please test with a fresh LO, you may use master, but even better would be to test with new LO 7.3.3, which is already available (as Prelease).

Tested with Version: 7.3.4.2 / LibreOffice Community Build ID: 30(Build:2) CPU threads: 12; OS: Linux 5.18; UI render: default; VCL: kf5 (cairo+xcb) Locale: de-DE (de_DE.UTF-8); UI: de-DE Calc: CL (new profile) Problem is back
Tested nightly build of 7.4.0.1, this is working
If higher version works fine, then no point in opening bug for older version. But here is interesting that "problem is back" in the same 7.3. First step is to reset/rename LO user profile. Please explain how you install, do you build or deb or PPA.
I used the RPM coming with openSUSE Tumbleweed and started the program with soffice -env:UserInstallation=file:///tmp/test
This doesn't seem to tbe mail merge problem. Rather, Options doesn't apply the value immediately, only on LO restart. Seen if Options is open again. I confirm it doesn't work in LO 7.3 but it does in 7.4 and 7.5+. So I close again.
