Description:
If a video or series of screenshots for how to create page numbers in a footer/header, let me know.  

I've been with OOO and LO and donated several times since early 2000s.  I looked at the 700 page 7.3 documentation doc.  It looks like you are making LO to be as complicated as InDesign.  Insert Page Number in Footer is a good example of an intermediate skill, no longer possible to do.  Youtube tutorials on earlier versions are worse than nothing as 7.3 has a completely different conception-which I cannot track to succeed with.
I suggest LO NOT compete with InDesign, that it hold steady on the target of replicating MS Office WORD and it's clunky but easy to explain function.  
Alternatively, do a new branch of LO with a new name which does approach InDesign.  

Actual Results:
the only result I can get for a page number is the text "Page Number" appearing in what must be the page numbering field.  

Expected Results:
In earlier LO editions, in normal (pages view) the system gives the page number in the field.

Additional Info:
The 7.3 documentation suggests entering a page number is about five levels deep.  I suggest you change this to no more than three levels deep, no deeper than MS Office has this function, even if its less elegant or incompatible for InDesign-like production.
