When I right-click on a pie chart data point there is no "Format Data Point" only "Format Data Series" on the drop-down menu.  And I cannot find the ability to, for example, change the color of a pie chart segment anywhere in Calc.

You need to make two single clicks to select the sector and then you get 'Format data point' in the context menu.
