Presumably, you did bypass Gatekeeper when you first launched LO after installation to authorize execution of the app bundle using an admin account ? Have you installed any language packs, and if so, which ones ?
I did bypass gatekeeper and use it and I still get the issue and I did not install any language packs.

@Paul: can you try with the latest beta release of LibreOffice 7.5, and use the aarch64 version instead of the x86_64 version when you download it ? Some fixes went in recently, and these seem to have cleared up quite a lot of the sudden crashing events.
