Heading 1, - Using Toggle Ordered List dropdown button's dropdown, pick eg. 1) 2) 3), - Click the button part of Toggle Ordered List dropdown button. => Expectation is that the numbering is gone, but only the number is gone, the ")" and the tab stop is remains. Workaround is to open the Bullets and Numbering dialog, and press the Remove button. Observed in LO 7.6.0.0.alpha0+ (2721520ca37654056c3d509657c50ee42e3dcae4), 3.3.0 / Ubuntu. Steps are slightly different in very old versions, because those don't have such dropdown buttons, but there's a dialog to set similar numbering.

You have set a ')' as a separator. It will be shown in preview that this separator could be set without any numbering. So you could set different separators like bullets. If separator is part of the numbering, not separated, I would expect ')' won't appear when number isn't chosen.
