Even the undo function doesn't help to restore the pivot table, its just gone. some times even graphical bugs appear where contents of another table are viewed on top of the former pivot table. very weird. Reduce the data at minimum, and use find and replace to depersonalize it.
I have witnessed this in my testing of bug 158054, a duplicate of bug 158223, which should be fixed in the upcoming 7.6.5 version. Can you please test a daily build of 7.6.5 and let us know if it is fixed in that version? https://dev-builds.libreoffice.org/daily/libreoffice-7-6/
