File > Digital Signatures > Digital Signatures should only list the signature applied to the current document. Or do you mean there is nothing listed in the "Select Certificate" dialog? After signing a Writer document by clicking on "Sign Document" and selecting an OpenPGP certificate in the "Select Certificate" dialog, I can see it listed in the Digital Signatures dialog.
