Then, if you want to delete one of them in the window that insert a bibliography, you can't because this option doesn't exist. Then the only option is to keep adding references because you cannot delete the wrong references.

I confirm, that it is not possible to delete bibliography entry in "Edit Bibliography Entry" dialog. You can easily delete it using the navigator in the sidebar or just by deleting the text. So personally I don't see the need for such an option. But let's decide design-team
And you can delete with the Delete or Backspace key in the document. I don't understand the need to manipulate the document content from the edit field dialog. IOW, Insert > Field > Page Number - or any other - do you expect there further operations beyond editing the appearance? What makes the BE so special?

But let's decide design-team Agreeing with your comment Dieter. Additionally, if a reference is deleted in the dialog, what is expected to happen in the text? Of course that would depend on how a reference is used in a specific case.
We discussed the topic in the design meeting. The bibliography entry is a reference to the variable like other fields, and none can be deleted from the insert/edit dialog. If you delete the field from the document it will also be removed as source (unless the workflow involves a database, see https://help.libreoffice.org/latest/en-US/text/swriter/guide/indices_literature.html). Some issue crashes the application when changing the short name entry in the define bibliography dialog. Reported at bug 164179.
