The sheet tabs show all the sheets used in the file. But I cannot use the navigation button to hide the old sheets.
Please @rhchalmers, what it's your LibreOffice version? Can't you right-click the tab and select hide?

These buttons are used to scroll through the tabs in a file that has many sheets and not all visible in the UI. When all the tabs are visible, no scrolling is required, so clicking on the buttons will have no effect, but this is causing misunderstanding among users to make these more clear to the user what the function of those button is, the following report has already been filed. Bug 94171 - Make navigation arrows in Calc visible only when they are needed and place them on the right so it's clear that this bug report is due to misunderstanding of the navigation tab sheet button.
