On OS X 10.11.2, first noticed on LibreOffice 5.0.2 and still present on 5.0.4:

Trying to make a cell contain only a lowercase 'i' fails, because LibreOffice forcibly capitalizes the 'i' into 'I'.

This happens even on a brand-new spreadsheet, and even when spell-checking, grammar-checking, autocapitalization, and autocomplete are all disabled, and even when every checkbox in Preferences->Language Settings->Writing Aids is unchecked.

Even if I first wipeout ~/Library/Application Support/LibreOffice first, I still get this.

already known issue.
I don't remember the exact bug number but it has also been reported in forums

The bug that this one is claimed to be a dupe of, 36867, says right in the thread that the present buggy behavior is NOT a dupe!  (See the bottom half of its comment #4.)

If the cause of this is overzealous "replacement table", then it really needs to be disableable from the main Preferences window (Cmd-; on the Mac) under Writing Aids, where everything else having to do with "helpful checks" is.  I would never think to look in Tools->AutoCorrect Options, since I thought I turned all that stuff off in Preferences->Writing Aids.

I still can't find the original report where I saw this issue reported before but it wasn't Bug 36867

probably the substitution is due to an "i" to "I" english autocorrect entry

why don't you try locating this autocorrect entry and deleting it or modifying it into "i .*" to "I " 

tell me if that fixes things.
for the moment I revert status from DUPE to NEW
