I define a range of 30 Columns with "Define Database Range" and select the range via "Select Database Range". Then I open the sort dialog, whereby I get asked if I want to extend the selection to the columns left and right, what I agree to. After that my defined range is modified to that extension.

I don't get asked anything on sort. Do I have to have content in the cells? Please attach an example document.

Set to NEEDINFO.
Change back to UNCONFIRMED after you have provided the document.

If you select the range through data menu and sort it with the columns left and right to it, the range gets modified.

As stated by Buovjaga, it doesn't confirm with the first description of the bug. But with the description and document added in comment 2, I can confirm the behavior. 

- create a new one column data range (data>define range...)
- select the created data range
- sort 
- extend selection on "sort range" dialog
- the data range is updated to the extended selection

It seams like a bug to me as the user never explicitly wanted to change the data range. 

Also, it happens when the selection is made with the "select range" on the data menu, AND when the selection of the data range is made manually.

I would say it is inevitable, necessary, that the database range is updated if it has to be sorted.

@olivir: what would you say?
