Now, if I want to type '10/03/2016 (french date) to format the input like text, it doesn't work anymore. Instead, it insert typographic "opening" simple quote, like this: ‘ and permit to close by typing apostrophe again, like this: ’ I think a lot of users prefer the old way ! Why not define the behavior with an option ?

Not reproducible for me with LO 5.1.3.0.0+ built at home under Ubuntu 15.10 x86-64. Best regards. JBF
Tools > Autocorrect options, in the last tab (localized options) : Uncheck Replace Single quote, and have a new try.
The solution of GerardF works fine. So you can close this bug.
(In reply to eric.coutier from comment #4) > The solution of GerardF works fine. So you can close this bug. Ok, closing as WorksForMe. That said, in my case, it works even if this checkbox is checked. Best regards. JBF
This is a bug and should not need a workaround. From: https://help.libreoffice.org/Calc/Formatting_Numbers_as_Text "If you decide to enter a number directly as text, enter an apostrophe (') first. For example, for years in column headings, you can enter '1999, '2000 and '2001. The apostrophe is not visible in the cell." Eric, Are you also using Ubuntu 16.04? I'm seeing this in Version: 5.1.4.2 Build ID: 1:5.1.4-0ubuntu1 that ships with Ubuntu. However in my own 5.3 builds on Ubuntu work as expected without the need for a workaround. This may be a bug in 5.1.x or with Ubuntu's configuration.
