Fresh install Linux Mint 18 64 bit, fresh install of Libre Office 5.1.4.2 from the Mint repos. When opening a document with multiple pages I see not one but two pages in the Libre Office window, one on the left and one on the right. If I scroll down a bit I can see portions of 4 pages. In any event, even if I maximize the Libre Office Window there is no way to limit Libre Office to displaying one page at a time.
Try via menu View -> Zoom -> Zoom..., and then changing View Layout to "Single page" or "Automatic". If that isn't the solution to your issue, se status back to UNCONFIRMED.
As I said, there is no way to limit Libre Office to displaying one page of an *.odt at a time. Let me clarify. You can change via menu View - Zoom - and change to single page for the present document only. The change is not persistent. If you open another document, or close Libre Office then open another document later Libre Office defaults back to the multiple pages. The default setting "automatic" shows multiple pages and there is no way to disable it permanently that I can find through the menus. If this is intentional and not a bug, it's poor design. I have two eyes and wear trifocals. Bobbing my head back and forth and up and down all day long makes for a very uncomfortable experience.
The way I can see it, the setting gets saved with the document, and the last used setting is saved when you close/reopen Writer. So, just change when the document is open, save it, and it'll open with that setting the next time. A bit quicker way to set view layout is via the icons next to the zoom slider in the bottom right corner.
