ctrl-a then choosing a font (it appears in the font box in the toolbar).
when I stroke backspace, anywhere in my document, the font swaps to another (the default one for instance)
I can't get keeping my font along my work and need to reset it every backspace hit.

Why not use paragraph styles instead of brittle direct formatting? https://help.libreoffice.org/Writer/Styles_and_Formatting

Set to NEEDINFO.
Change back to UNCONFIRMED, if you are not happy with styles. Change to RESOLVED WORKSFORME, if you are happy with styles.

This behavior was caused by DMath changing backspace action. I corrected back to default and all was right again.
