1. Because everyone is accustomed to using the default symbols of Microsoft Office, if the default symbols are the same, you don't have to look for symbols.

LibreOffice is not a clone of Microsoft Office. So copying MS Office is not a good idea.
Moreover, your first point is wrong: many LO users have not used MS-Office for years.

My suggestion is: WontFix.

Favorites bar is customizable and recorded per user to profile, remove any unwanted. Add any missing. Max of 16 slots.

Microsoft Office preset symbols, plus a few common symbols, are also available.
