Almost every time I use Libre writer, my words start appearing in orange letters with strikethrough.  When I try to delete that and start again, I can't.  This has happened even after several upgrades.  Always the same bug.  What is this?

This is not a bug. You have recording changes enabled [1], possibly accidentally using keyboard shortcut (Shift+Ctrl+C).

Remember to disable this function, not turn off its view. If you don't disable it, but only hide, you would still record changes, and everything in the document, including what you had deleted, would be available for anyone seeing the document.
