In current version, if I have a coloumn that contains several ocurrence of "A" and "a" - each with different meaning, Libre Office will threat those as equal items.

It would greatly help if there was an option in the "data field" dialog box that appears when double click on a row/coloumn/data field item - that let the user choose if Calc should sort case sensitive or not.

don't think it's a good idea in general. 
It doesn't matter where could be that option.

With Data > Sort (Options) you have access to case sensitive. Please also consider natural sort, see https://help.libreoffice.org/latest/en-US/text/scalc/01/12030200.html 

Like Roman I vote for keeping the UI clean and to not add another control that exposes this option. => WFM
