Behavior is an autocorrection feature. Configured by locale.

Simple to disable (or modify to a different character) the default autocorrection.

From the main menu:
Tools -> AutoCorrect -> AutoCorrect Options  and on the 'Localized Options' tab --uncheck or modify the 'Single Quotes' (or the 'Double Quotes') substitution.
