How useful is selecting an entire sheet including its full range of empty cells really? There are already keyboard and mouse click selections, but if you want it simple to use Tools -> Customize and assign the .uno:SelectAll control to any of the Context menus (though you'd probably want it on the Cell context menu). Otherwise WFM and => WF for adding to Calc context menu by default.
