Please attach a sample file, reduce the size as much as possible without private information, and paste the information in Menu/Help/About LibreOffice, there is a copy icon.

Tested this:
Opened the database browser, set the data format of a date field to a format I normally won't use. Took the table header and pushed it to the writer document. A field for mail merge has been created.
Printed this page.
Data will be formatted as I have defined.
Close the connection and the Writer document.
Opened the Writer document again and printed the page.
All pages will show date as it has been formatted by me.

One hint:
Properties of a field will only be saved for tables and views, not for queries. You could change the properties for queries but with every reload of the query you have to change it again.

Tested with
Version: 24.8.4.1 (X86_64) / LibreOffice Community

Did you open the Database editor directly in Writer? The bug only happens with the internal database editor available in the mail merge function.

Confirm with
Version: 25.8.0.0.alpha0+ (X86_64) / LibreOffice Community

CPU threads: 16; OS: Linux 6.8; UI render: default; VCL: gtk3
Locale: ro-RO (ro_RO.UTF-8); UI: en-US

See the image, no matter what format will be inserted here, the change is not accepted.

Well, a possible improvement would be to not show the user the option to edit, it gives a false sense of being possible, but it is not.

But thank you very much for the incredible support.
