When I change Tab colors and save the changes, everything works as expected.  However, after a protect the sheet, the tab color reverts back to black.

Not reproduced. JKRemington@gmail.com could you please confirm the steps ?
1. Right-click on Sheet1 tab, select "Tab Color..."
2. Choose a color from palette "Standard" and press OK
3. Right-click on Sheet1 tab, select "Protect Sheet"
4. Enter & confirm a password and press OK

What file format do you use ?

Attached is a copy of the spreadsheet.  There is no password needed to unprotect the sheet.
