If working in Windows 10/11 Dark color mode, you may just need to apply an Appearance theme extension from Tools -> Options -> Appearance

The 'Light Application Color' theme should get you back to the < 24.8 UI.

Alternatively, you could exit LibreOffice and then use Windows search for "Dark" it should find the 'Turn on dark mode systemwide' pointing to Personalization -> Colors

Use the 'Choose your mode' listbox and pick Light. The entire system will shift to light mode. Then relaunch LibreOffice and see if your Calc sheet is fully visible.

Let us know.

The defaults and Automatic switching supporting dark mode and the LibreOffice appearance themes have been made more robust for the pending 25.8 release, you might jump ahead to that branch.
