The description does not say it all. Which application is this? Writer? Calc? Impress? What kind of an action is "macOS nighttime settings"? Is it something that changes at a certain hour? If so, what if you restart LibreOffice? Please share an example document showing this. If the text is formatted with Automatic colour, it will adapt to the background colour. If a colour has been set explicitly, it will not change. In that case, you need to specify in LibreOffice - Preferences - LibreOffice - Appearance that a white background is used.
@mshields7 : Please tell us whether you have activated "Night Shift" in the macOS system settings, and if so, the choice of setting. From the vague description provided, I would hasard a guess that it is the system dektop appearance which is causing the problem. Please tell us whether you have set your desktop Appearance Mode in macOS system settings to Automatic. The use of the Automatic desktop appearance setting is known to cause issues with LibreOffice's own display if this is set to Dark theme, because it does not update dynamically for all parts of the application without a restart of LibreOffice (which is a bug, because it should be a nicely behaved macOS app, but everyone who has ever used LibreOffice on macOS knows that it isn't, for a whole number of historical reasons).
