Description:
When LibreOffice is using the the gtk3 VCL (on desktop environments like GNOME, Cinnamon, MATE or Xfce) the default/automatic icon theme is Elementary for Light Theme and Sifr (Dark) on Dark Theme, because Elementary doesn’t have a Dark variant as far as I know. By using the Colibre Icon Theme, I believe that LibreOffice could achieve a more cohesive experience on this environments and provide a consistent iconography (see attachment).

Steps to Reproduce:
1.Go to Tools -> Options... (Alt+F12)
2.Go to LibreOffice -> Appearance
3.On the LibreOffice Themes section, select either Light or Dark 
4.Click OK

Actual Results:
I see that the iconography is different. For instance, the Save Icon is a File on Elementary while on Sifr (Dark) it's a Floppy Disk.

Expected Results:
I would expect that when using either theme, the automatic icon theme adapt while maintaining a sense of familiarity.

Other information: 

- Similar to Windows where Colibre is used, MacOS with Sukapura, and KDE Plasma with Breeze.  
- I suggest the Colibre Icon Theme because Sifr and Sifr (Dark) are already used as High Contrast Light and Dark themes as far as I understand.
- This enhancement is primarily focused at the packages distributed via libreoffice.org and flathub.org and not the versions maintained by Linux distributions.

I explored the VCL source code repo and found that vcl/source/app/IconThemeSelector.cxx (https://git.libreoffice.org/core/+/HEAD/vcl/source/app/IconThemeSelector.cxx) at line 86 there is a conditional that sets the icon theme. I will try to make a change to the values.

Personally, I've no skin in this game. Colibre vs Elementary/Sifr for the GTK based DEs seems reasonable to me, but a bit of a departure.  Are we ready for it at 26.8?

Also, there is still discussion around the icon theme packaging spec being placed under control of the Appearance theme designer's control.

Elementary is massively superior to Colibre in my opinion - in Light mode. I like it as the default - it makes it easier for user to distinguish button functionality, as it is less abstract and uses color more than themes like Colibre and Sifr. 

Regarding the argument for consistency of icons across platforms/DE's - we don't even use a consistent UI toolkit, so I don't see why the icons have to be the same; and there's the matter of agreeing with the DE's overall style. But - if we were to choose a uniform icon set, then definitely Elementary for Light mode.

As for Colibre vs Sifr in Dark mode... this is a bit of a tough call. Colibre uses colors, which I like in principle over monochromaticity. But for some icons, the color is limited to a small element and barely visible, e.g. the Track Changes icons, so it's more of a hint or aesthetic adornment; and the effective use of color is more tricky in Dark mode anyway.

Sifr is close to being monochromatic (it also uses gray); but - it uses thicker lines, and better-pronounced/larger visual elements, than Colibre.

Please no, current state of the icon themes is good enough for any types of users, I think
