The shortcuts I set up simply revert after a while, Extremely frustrating as I copy a lot of text that I do not want formatted.

On which LO version are you? Last stable one is 4.4.3. If you don't use this one, please give it a try.
Also, perhaps there's something corrupted on your LO directory profile (see https://wiki.documentfoundation.org/UserProfile#Windows). In this case rename it and try again.

I Updated to the latest version, after the update my computer bacame extremely unstable and I had to resort to SFC /SCANNOW to fix corrupted windows files, it was most likely a windows update that I installed around the same time that was the problem though, Still I removed Libreoffice just to be sure.
I have now reinstalled libreoffice and all seemed well but, when I loaded my configured shortcut settings I seemingly lost a load of normal functionality, including backspace and arrow functions, Should I open up a new support case about this?
Is there any neat way to get back to default other than reinstallation, the reset button only seems to reset to the config file I supplied

Other than that the shortcut that I have created seems to work for now.

I don't know about reset button but renaming LO directory profile (see comment 1) should avoid you a reinstall.
