In Impress, the hyperlink text (presented as some kind of "block") can not be accessed for editing using the cursor. 

Keyboard: Using the keyboard, the user can only move the cursor before the beginning of the hyperlink, and with the next press move after the end of the hyperlink. 

Mouse: If the mouse is used to click on the hyperlink text for editing, it either opens the URL, or just does nothing (depending whether you are already editing the text or not).

In Writer, as the hyperlinks are not presented as blocks, all is fine there.

This is the same situation as in Calc.
Select the field  (shift+Left or Right), click Ctr+K (Insert > Hyperlink) .. there you can edit it.
