Do you reproduce this on a brand new document or only on this specific document? If specific, could you attach the document? (have in mind that any document is automatically made public so remove any confidential/private part from it).

A few questions: 1. What do you mean by 'try to capture text'? 2. Could you please create a screencast? 2. Is it reproducible in the latest version of LibreOffice from https://www.libreoffice.org/download/libreoffice-fresh/ ? I have set the bug's status to 'NEEDINFO'. Please change it back to 'UNCONFIRMED' if the bug is still present in the latest version.
On pc Debian x86-64 with master sources updated today + gtk3 rendering, I tried to reproduce the Eric's step by step process (I supposed "capture some text" meant "select some text") but no pb here. Perhaps I missed something. Eric, you can also give a try to a newer version like 5.4.3.
