This particular error has occurred for the last several versions of LibreOffice x86_64 for Windows. The installation of a new version over a previous version fails when copying files. After the uninstall is complete. I then re-attempt to install the new version of the product, and it still fails. So I enter the Program Files folder and notice that the LibreOffice 5 folder is still there even after the uninstall. So I attempt to delete the LibreOffice 5 folder, but Windows does not allow it to be deleted, even though I am running as the Administrator. I then reboot, and I am then able to delete the LibreOffice 5 folder. I now can install LibreOffice x86_64 version with no problem. I have to follow these steps every time I wish to install the latest version of the product. It should be noted that the PC was originally running with Windows 7 Pro, then upgraded to Windows 10 Pro via the Microsoft Free Upgrade period. The problem occurs with Windows 10 Pro 64 Bit.
